What began as a religious occasion (and still is for many people) has become a festive day of parades, parties and good food. Here are some recipes you can use to make your St. Patrick's Day a tasty one. Corned Beef and Cabbage (East Windsor Patch) Ingredients Directions 1. Place corned beef fat side up in a large pot and cover with water. 2. Bring water to a boil and add the contents of the spice package. 3. Reduce heat and simmer, covered; one hour per pound. 4. The results of this week’s Best Of series are in! This week’s poll garnered 114 votes and nine reviews with Bridget’s An Irish Tradition topping the charts for the Best Place to Celebrate St. Patrick’s Day. Trinity had a solid run earning second place and 25 votes. McMahon’s Countryside Grille tried to get redemption after week one’s epic battle, but was unable to overcome the competition and ended up in third place with eight votes. Trinity has one four-star rating in our Places section. They are counting down to St. Patrick’s Day by serving a boiled dinner now through March 17. In honor of the holiday revered throughout New England and celebrated later this week, I thought I would share some family recipes that have been part of the Mahoney family March celebration for many years. The first is a recipe for corning your own corned beef – this will result in a totally different looking piece of meat from the typical corned beef you purchase in the supermarket or butcher store. It is gray in color and retains more of the beefy flavor. Corned Beef: Dissolve the following in a large bowl or pot (it is not recommended that you use metal or plastic – a glass or ceramic container is best): 1 cup salt, 3 tablespoons sugar, 2 teaspoons allspice, 3-4 cloves minced garlic, 6 whole peppercorns and 8 cups water. As a person of 100 percent Irish heritage, I can tell you about lucky charms--potato famine/British Corn Laws--young people being forced to emigrate to make a living--British occupation--Black and Tan terror---a long and bloody fight for independence.
