Move over basil, make way for your new nutritionally superior pesto rival, swiss chard. Swiss chard is high in vitamins A, K and C and is also rich in minerals, dietary fiber and protein.
Ingredients:
1 bunch swiss chard

3/4 cup olive oil
1/4 cup grated parmesan cheese

1 cup toasted chopped walnuts
2 cloves of garlic
1 whole shallot
salt and ground black pepper to taste
squeeze of lemon
Directions:
De-stem and chop the swiss chard for the food processor. Add the swiss chard and run the food processor and add the olive oil intermittently. Next add the walnuts and process. Add more olive oil, parmesan cheese, and roughly chopped garlic and shallot. Continue to stir throughout breaks in processing to help the pesto along. Lastly add the lemon squeeze, salt and pepper. Stir and run the processor a bit more. For a thicker pesto add less oil, for a thinner pesto add extra olive oil. Enjoy!
